Chicken Pie

I would like to share the recipe that I copied from my latest cook book...

The basic pie crust:
280g multipurpose flour
1/8 tsp salt
115 g vege shortening
115 g unsalted butter (cold)
1 egg (grade A)
2 tsp white vinegar
2 tsp cold water

Just add flour and salt into the mixing bowl. Put in the shortening and cold butter (cut into small pieces). Mix together until become like damp sand.
Beat the egg and vinegar and also the water. Slowly pour the egg mixture into the flour mixture and mix well until it becomes damp. Rest the dough in the fridge for about 1/2 an hour before putting it into your pie dish.

The chicken filling:
1 whole big potato, diced
2 carrots, diced
2 tbs salted butter
1 cube chicken stock
2 tbs multipurpose flour
530 ml milk
55 g green peas
225 g cooked chicken
black pepper powder to taste

Method :
Boil carrot and potato 5 -10 minutes until empuk not lembik. Strain the vege and put aside.
Melt the butter and chicken cube and put in flour and mix the paste well for 1 minute. Immediately remove from the fire and add in milk and mix well. Cook again on small fire for another 10 minutes until the sauce is thicken. Again remove from fire and add in green peas, chicken and black pepper. Mix well and again put on moderate fire for another 10 minutes until the sauce thicken. Remove from fire and it's ready to be combined with the crust.
Note: banyak betul remove-remove from fire... but it's the method, believe me.. Another way is to tutup api and bukak api gas... tak yah nak angkat-angkat periuk tu..
